Today on Kimchi & Cocktails I give you Oi Muchim! Korean cucumbers.
Directions
- ¼ cup white vinegar
- ¼ teaspoon black pepper
- ½ teaspoon red pepper flakes
- 1 teaspoon sesame oil
- 2 tablespoons sesame seeds
- 2 tablespoons gochujang paste
- 1 cucumber, thinly sliced
- ½ green onion, sliced
- ½ garlic, diced finely (my own addition, you can drop this if you like)
- 1 small bag sliced radishes (my own addition! You could also use carrots or whatever crunchy veggie you love)
combine wet ingredients together along with seeds and pepper black and red, mix really well. Toss your sliced cucumbers, green onions, garlic and radishes into a big jar. Smother with you wet mix, screw on the lid and shake it all up. Put in the fridge for about 30 minutes or eat right when you’re done!
I prefer it chilled. So will you! Dig in and enjoy!
